Was in the mood for some greens and threw together this tasty treat.
.
Marinate chicken breasts in maple syrup, orange zest, salt and olive oil.
.
Into a large bowl, zest an orange (navel or blood), then supreme it and juice it into the bowl. Add a splash of pomegranate red wine vinegar, salt, a bit of sugar (Truvia if you wish), pepper and olive oil. Mix.
.
Rinse and dry kale. Finely chop and add to the large bowl with dressing.
.
Peel and dice butternut squash and marinate in maple syrup, salt and pepper. Sauté in a cast iron skillet until caramelized and just cooked through. Set aside to cool.
.
While butternut squash is cooking, make 1C quinoa with 2C chicken broth and set aside to cool.
.
Once butternut squash is done, add marinated chicken breast to cast iron skillet and pan sear until 165F. Allow chicken to rest and cube when cooled.
.
Add butternut squash, quinoa, cubed chicken, sliced almonds, and dried cranberries to the kale and dressing bowl.
.
Toss to coat evenly and dig in! Add avocado at the end if you wanna get crazy! 🥑 🎉

#sichuanfolk in @cityofplano is the shiznit. Took my family there for my brother’s birthday. We killed a bazillion dishes, but these made the #eatingforthegram edition.

Spicy, crazy flavor bomb madness. It’s the Chinese version of the Mexican joint where no one speaks English but who cares because everyone is head-first deep diving into dishes. Yeah. Like that. It’s where the folks who want REAL food go. Sichuan Folk.

Garlic ribs, Szechuan noodles, fried green beans, I can’t remember spicy beef with deliciousness. It doesn’t matter what you order. Just go order.

Things around here are just quiche-y.

There are two things I think everyone should have in their cooking arsenal: The ability to make a good pie crust and creativity to fill that pie crust with unlimited possibilities.
.
Today, the pie crust was filled with eggs, cream, bacon, a touch of cheddar, leftover steamed broccoli and small dollops of mashed potato from last night.
.
The salad dressing was light — simply made from lemon zest, lemon juice, oil, a small bit of honey and some truffle salt.

@pskitchennyc saved the day today with killer #vegan fare just a short walk from my hotel.
.
Their maitake mushroom buffalo wings were off the hook! That house made blue cheese was the perfect cooling touch for the kick from the hot sauce.
.
And, their zero-proof strawberry bev hit the spot after an afternoon walking to Central Park and back in the hot New York sun, but that new old fashioned paired perfectly with the “dessert” truffle fries. 😁
.
Gotta say that the biz event was a great success with a ton of takeaways, but I wish I’d been able to have takeaways from all my meals in NYC!! 😂One more meal before hopping on a plane. Don’t know where, yet, but I’m pretty sure it’s gonna be a good one.

Croquetas de jamón in the first pic with a cheese bread and smoky, creamy sauce (I’m not doing the dish service with my descriptors, but I was too happy eating to think of fancy adjectives).
.
The next two photos are of the BEST dadgum bite of cauliflower I’ve had in my LIFE! CAULIFLOWER!
.
Bistec and pear custard tart rounded out the meal in spectacular fashion.
.
I don’t ever eat breakfast or lunch if I have all day meetings during biz trips. This way, I can enjoy a good foodie experience at dinner. It’s a good rule to live by. 😋♥️🔥

A lil’ ol’ place by the name of @bourbonstreetoystertc opened up in my neck of the woods about a month ago, and I’m kickin’ myself for not showing up sooner!

Bear and I enjoyed a Louisiana feast! Chargrilled oysters and crawfish 🦞 dip kicked everything off.
.
The atmosphere was jumpin’ just as you’d expect. Service was spot on, and we even had a manager visit the table — something that doesn’t happen too often anymore in joints like this. It was a nice touch.
.
We shared crawfish etouffee, as we sipped our Purple Decatur and Rum Punch 🍹 and savored every minute of it.
.
The original may be in Fort Worth, but boy, am I happy they crossed over to give us some love.
.
I just know my friend, @kay.mcfarlane, was smiling down on us — happy we found some NOLA in the neighborhood. 💜💛💚

We had a killer cookout for my Ma and feasted on chicken, veggie, and beef kabobs.

I’ve never been a huge fan of Mexican mole.

Everyone put your molcajetes and palotes down. There’s a “but” coming ...

Bear, on the other hand, is the King of Mole with very particular tastes. While I’ve known about @tacosmariachi Mole Fries for a while now, I’d never taken Bear to check it out.
.
Today, I did. I’m still not a huge fan of mole, BUT I am DEFINITELY a big fan of the mole at #tacosmariachi off Singleton in Dallas — #sogood and Bear LOVED it!!!
.
We already knew their #tacos were badass, but this visit was just puro deliciousness.
.

Happy Easter! These colorful concoctions from @creamistrydallas remind me of bright cascarones!

Cascarones are empty, clean egg shells filled with confetti and then decorated with the colors of Easter — sealed with a bit of tissue paper and then cracked over your family’s heads, leaving everyone colorfully decorated!
.
There’s one rule when playing around with cascarones: crack the egg in your hand FIRST!! 🤣
.
Let’s just say that rule is rarely followed. 🤷🏻‍♀️Hope everyone has a blessed, happy day and ends up with confetti hair today! 🐣 🎉😉

The birthday boy @roqueg28 requested a special meal for the day before the big day: Spatchcocked rosemary lemon chicken with garlic herbed roasted potatoes. 😍🍽 Makes me happy when he’s happy! ♥️ Such a super simple recipe, too!
.
- 6lb whole chicken
- 1 small bag red potatoes
- 1 bunch parsley
- 5 sprigs fresh rosemary
- 3 large cloves of garlic
- 2 TBS olive oil
- 5 TBS softened butter
- 1 large lemon zested/juiced
- salt/pepper
.
Preheat oven to 375F. Par-boil the potatoes in salted water, drain and set aside. Chop parsley and divide into two medium sized bowls. Chop rosemary and add into only one of the bowls. Chop garlic cloves and add 3/4 to the parsley bowl and 1/4 of the garlic to the mixed herb bowl.
.
Add one (1) TBS of olive oil and two (2) TBS of butter to parsley and garlic bowl. Toss par-boiled potatoes into the parsley and garlic bowl. Season with salt/pepper. Set aside.
.
Add lemon zest and juice to the mixed herb bowl. Add remaining butter to mixed herb bowl and combine well. Season with salt/pepper. Set aside.
.
Spatchcock chicken. Spread mixed herb butter mixture under chicken skin and over all sides of bird. Season with salt/pepper.
.
Lightly oil large heated skillet. Sear chicken skin side down in large skillet for 5-7 minutes. Carefully turn over chicken and sear on underside for 5 minutes. Remove from skillet and set aside.
.
Add herbed potatoes and all mixture into the heated skillet and toss potatoes. Using a masher, lightly press potatoes to break open but not mash.
.
Add chicken skin side up over the potatoes and roast at 375F for 90 minutes or until thickest part of breast is 165F. Remove chicken from skillet, set aside and lightly cover with foil to rest. Return potatoes to oven and broil until golden brown and lightly crisp.
.
Enjoy this insanely scrumptious and simple meal with your honey bunny!!! (Or Bear in my case 😉🥰)
