Classic Roasted Tomato Salsa

Last week, Chef Rick Bayless posted a challenge to create a personalized version of Classic Roasted Tomato Salsa and a dish you’d use it in. I’ve always been a sucker for a good salsa. And, when he announced this salsa contest, I armed myself with fire and tongs.

I set up the mini-grill and got to work. Luckily for you, I had my handy-dandy phone with me and recorded the entire process — using the wrong orientation.

After crafting the BEST and easiest roasted tomato salsa (confident in your salsa, much?), I marinated fajita meat and threw that on the grill for some killer fajitas.

Once I posted the entry online, I was able to peruse through tons of other entries and picked up some serious ideas… like grilling peaches to add to the salsa, or using the salsa to make machacado, a stewed and shredded beef dish. There were some serious competitors out there!

Whatever happens, we had an amazing meal. Plus, I’m sharing the BEST salsa recipe EVER with you! (Seriously. It’s so good. Chef Rick, are you reading this? Tha-best.)
